Thai Quinoa Salad



Quinoa is my latest obsession. {It is hopefully balancing out my ongoing salted caramel addition...} Quinoa is delicious and super versatile. Breakfast, lunch or dinner. {and snacks!} We've been making a lot of quinoa lately. By itself, quinoa it kinda bland, but mixed with spices, seasoning, and veggies- Quinoa Salad. The perfect side dish, or even a meal, since quinoa is a complete protein. 

This Thai Quinoa Salad is easy and super nutritious! 
{Exactly what we need after last week's vacation eating!}

Ingredients:
1 cup of uncooked quinoa 
1 tablespoon of coconut oil
2 cloves of garlic, minced
2 tablespoons of red chili paste
1 tablespoon of fish sauce
1-3 Thai chilies {I used 3 and it definitely had a kick!}
 1 teaspoon of Garam Masala
Assorted veggies {I used half a red onion, carrots, snow peas, red bell pepper, broccoli, and mushrooms-about a half to a cup of each. But you can used whatever like/have}
1 can of light coconut milk
Scallions and chopped peanuts for garnish

Instructions:
Combine one cup quinoa with 2 cups water in a medium pot. Bring to a boil them reduce to a simmer and cover. Quinoa takes about 10-15 min to cook. It is done when the grains open up and soften.

While quinoa is cooking, melt coconut oil in a large skillet. Add garlic, red chili paste and Thai chilies. Saute until aromatic. Add fish sauce, Garam Masala, and veggies. Lightly stir fry veggies until slightly tender. Add coconut mild and let simmer until slightly thickened. Add in cooked quinoa and mix to combine. Garnish with scallions and chopped peanuts.
