London Broil and Crispy Smashed Potatoes


 This is a great recipe. It takes an inexpensive cut of beef and some potatoes and turns it in a gourmet meal. Doodle loves when I make this - she tells me it's almost as good as steak!
Ingredients:

London Broil:
2-3 lb cut of London Broil
1/4 C Balsamic Vinegar
1/2 C dry red wine
4 cloves garlic
Generous amount of salt and pepper 
Optional (if you like a sweeter marinade)
1 tsp honey or brown sugar

Smashed Potatoes
1lb fingerling red or yukon potatoes
Pinch of rosemary
Salt and Pepper
Parmesaean/Asiago Cheese Blend
Extra Virgin Olive Oil
Non-Stick Spray

Start by marinading the meat overnight in a zip lock back. Just simply mince the garlic and add to the remaining ingredients and stir - add to meat and allow the flavors marry overnight.

Take the meat out about 30 minutes before you are ready to grill to reach room temperature.


For the potatoes - Start by boiling the potatoes until nearly cooked through. About 20 minutes.


Next, take a potato smasher and CAREFULLY flatten the potatoes. You want them to smash a little bit, but not completely fall apart.  Just enough to open them up.
Spray a pan with non-stick cooking spray and lay out the potatoes. Before sticking them in the oven, season with the rosemary, salt, pepper, and cheese.Top with olive oil and a little extra cooking spray.  Bake at 425 for 20-30 minutes until VERY crispy.
  

Meanwhile it's time for the meat! This is best cooked on a charcoal grill - or as pictured here- on a grill plate.

Start by searing off one side - about 5 minutes.
 Flip meat and sear the other side off about another five minutes. Then, move to cooler side of grill and let roast. Use a meat thermometer and cook until the temperature reaches 135. We are shooting for 140 for Medium Rare - but remember meat continues to cook after removing from heat.
 It's very important this meat is served medium rare. It becomes tough if cooked to well done. Let rest at least 10 minutes to allow the juices to distribute. {Resist the temptation to cut early or you will leave the flavor on the cutting board}


 Serve with a side of asparagus or green vegetable. We simply threw on some fresh asparagus on the grill to soak up the meat the juices and  seasoned lightly with salt pepper.

Merry Christmas from The Sideways House


Merry Christmas Blog Visitors!

I had planned on writing this post yesterday but time just got away from me.

I wanted to share this year's Christmas card.
{Of course we had to get Layla in on our card.}





 I took all of three pictures yesterday morning.

 Brew tried to eat Layla's Christmas bone.

 And someone got some new guitar toys!

We had a pretty laid back day. We spent the whole day at home together.
Brew's family came over to celebrate in the evening.
And of course, Brew cooked a gourmet dinner!

And I wanted to share some brief Christmas reflections. 
This year has been bittersweet for our family for many reason.
I have been humbled and honored in the time I have spent with our family, friends and patients. 
It has truly made me realize that the greatest things in life are not things.

And I have to post one of my favorite biblical Christmas quotes.
It truly represents the spirit of the season.

Our 2013 Holiday Home Tour

 Hello Blog World!
I have been neglecting our little of the web in light of being super busy this past week.
{I had several people ask about my recent lack of updates...}

Well I wanted to share our Holiday Home Tour before the holidays are past.
{This is going to be a picture-heavy post!}

 Come on in to our holiday Sideways House!
Here's our kitchen. 
{Just ignore the difference in daylight in the below pictures and the darkness above...}
 I haven't shared many pictures of our kitchen on here because there are still several projects I want to start/finish before I'll be somewhat- satisfied with this space.
 I just added a few small Christmas touches around the sink.

 And of course I had to do a little something to our chalkboard wall!

Next stop is our dining room.
 We have done a lot of work in here in the past month or two.
New coat of paint and we hung the tray and carved plaques on the wall.
I decorate the chandelier a few weeks ago with garland and ornaments.

I just got these adorable wreaths in the mail this week. {Decor Steals! If you haven't signed up message me and I'll send you a $5 off coupon for your first purchase!}

I also switched out this knobs on our hutch. {but I have touched up the paint yet.}

I am loving bakers twine this year. I put on everything!


I added an old cheese crate full of pine cones to our gallery wall.



We really wanted a big tree after being in an apartment the last few years.Well this tree was a big one! We had to cut 6" off the top to fit the star on! 







I whipped up the two large stockings last week at my momma's. I wish I would have made a tutorial on them but they were a bit trial and error. I think they turned out pretty well though. 

I made a few small changes to our winter mantle to make it more Christmas-y! 
I added to J and Y to make the wreath Joy! 
And I added the poinsettia and evergreen sprigs as well!
